Recipe: Homemade Guacamole with Baked Tortilla Chips


Good news: Guacamole is a ridiculously nutritious food! Avocado is packed with heart-healthy Omega-3 Fatty Acids (those are the good kind!). Tomatoes contain phytochemicals including Lyocopene which has been shown to have antioxidant effects that may prevent certain types of Cancer. Jalapeños contain a compound called Capsaicin (Cap-Say-Sin), another healthy antioxidant that contributes to the spiciness of the pepper. There is basically no reason to avoid this food when attempting to eat a healthier, well-balanced diet!

Ingredients
  1. 2 Avocados
  2. 2 Small Tomatoes, Chopped
  3. 1 Small Lemon, Juiced
  4. 1 Small Lime, Juiced
  5. 1 Jalapeño, Minced
  6. ½ Bunch Cilantro, picked and chopped
  7. 6 Stems Parsley, picked and chopped
  8. ½ Tsp. Salt
  9. ½ Tsp. Pepper
Instructions
  1. Mash avocado with a fork until desired consistency is reached.
  2. Fold in the remaining ingredients until well-mixed.
  3. Refrigerate in a sealed container for about a half hour to allow flavors to develop.
